Carrageenan is basically a food additive that is obtained from chondrus crispus, red seaweed which is most commonly called Irish moss. This additive substance contains no additive nutritional value and it is basically used as an emulsifier and thickener that improve the texture of yogurt, cheese, ice cream and many other foods.

In order to obtain this substance from seaweed, seaweed is baled, dried and harvested. After this, it is sifted, grounded and properly washed in order to remove sand as well as other impurities. After this, seaweed is soaked in potassium hydroxide that is basically an alkali solution which is later heated in order to separate this substance from seaweed.

This substance can be classified into three different categories that are widely dependent upon the sulphation degree.  There is only one sulphate in kappa disaccharides; two in iota disaccharides while three in lambda disaccharides.
